Synopsis
Edible insects are becoming increasingly important as sustainable food sources today. Insects are a nutritious food source with high protein, vitamin and mineral content. While the rapid increase in population increases the negative effects of traditional animal husbandry and agriculture methods on the environment, edible insects offer an environmentally friendly alternative with a low carbon footprint and less water and land use. However, it is thought that understanding the ecological and economic potential of insects, with their advantages such as reducing greenhouse gas emissions and minimizing water and land use, will play a strategic role against food crises in the future. Therefore, edible insects are seen as an important source of solutions for sustainable nutrition and resource management in the future. Studies on edible insects aim to develop sustainable food production, food security and environmentally friendly alternative protein sources. These studies aim to make them suitable for human nutrition by examining the high protein, vitamin and mineral content of insects. Additionally, insect farming is being explored as a solution to reduce the environmental pressures created by traditional animal husbandry. Based on these explanations, this part of the book aims to provide information to consumers about edible insects, to indicate the positive and negative aspects of edible insects, and to provide information about what edible insects are in the world and in Turkey today. In line with this goal, the relevant literature was scanned and the conceptual framework of the study was created.
