Synopsis

Throughout history, saffron (Crocus sativus L.), known for its medicinal properties, has stood out in modern pharmacology, particularly for its antioxidant and neuroprotective effects. It has been shown to have positive effects on various health issues, including depression, anxiety, cognitive disorders, cancer, diabetes, cardiovascular diseases, neurodegenerative conditions, and eye diseases. Key components of saffron, such as crocetin, crocin, safranal, and kaempferol, demonstrate these beneficial effects by enhancing antioxidant defense and reducing oxidative stress. Additionally, the recovery of saffron waste holds the potential to reduce environmental pollution and provide economic benefits. Currently, the effects of saffron on the central nervous system and chronic diseases are being extensively studied. Scientific evidence supporting the positive effects of saffron on cardiovascular, metabolic, and neurological health continues to grow. This chapter highlights the importance of saffron in medical applications by summarizing current findings on its health benefits.
