Synopsis
Over the years, the Tourism Industry, which has rapidly grown to become one of the world's largest industries, has faced various challenges in the VUCA environment. Tourism businesses have embarked on new quests to reach their goals by providing quality service, reducing costs, increasing efficiency and effectively competing in this environment. Lean management, once predominantly applied in the industrial sector and more recently adopted by service sector businesses to achieve their goals in the VUCA environment, has become a widespread and popular management approach. Lean practices and related scientific research carried out in tourism businesses, especially in food and beverage units, show that the proven potential of these management practices in the industrial industry is one of the successful methods to meet the needs of the tourism industry. This chapter discusses the applicability of the lean management paradigm and lean management practices in the tourism industry.
